Stuffed veggies

Ingredients:
  • stuffable, fresh, in-season veggies. Try bell peppers (any color of the rainbow), jalapenos, or zucchini, squash (butternut, crookneck, etc.). Start with 4 or 5 total.
  • ground meat of some kind. Try turkey or pork sausage. Start with a pound.
  • bakable cheese. Try mozarrella, pecorino romano, parmesan, ricotta, etc. Probably about a half cup, maybe more.
  • ketchup (a squirt or so) or tomato paste (3-4 Tbsp)
  • flat-leaf parsley, chopped (maybe a quarter of a bunch)
  • spices as you please
Halve and de-seed your veggies. Mush everything else together and heap into the veggies. Top each veggie with a little more cheese. Grease a baking dish with about 2 Tbsp of olive oil & place the veggies inside. Bake (uncovered) at 350ish for 20 min/half an hour, until veggies are soft & meat is cooked through.

Serve with salad & garlic bread!
