Ingredients:
- 6 English muffins, halved
- 1-2 zucchini
- 1-2 yellow squash
- 2-3 cups of grape tomatoes
- 1 medium onion
- 2 cloves of garlic
- 1 to 1 1/2 cups of cheese (try mozarella & feta)
- olive oil
- balsamic vinegar
- fresh basil, if you've got it
- grilled chicken breast, diced (optional) OR
- pepperoni & salami
Preheat the oven for 400 degrees. Line up the English muffin halves on baking sheets and warm them in the oven as it heats. Halve the grape tomatoes, grate the zucchini & squash, dice the onion, & grate or finely chop the garlic. Saute the onions with some olive oil until they're almost done. Add the grape tomatoes at the last 2-3 minutes to soften & lightly carmelize them.
Sprinkle some olive oil & then garlic on the English muffins. Layer on the tomatoes & onions, then the zucchini & squash, then chicken or pepperoni if you're using them, then plenty of cheese. Top with some finely shredded basil if you've got it, a drizzle of olive oil, and some fresh-ground black pepper & salt.
Bake at 400 for 15-20 minutes. Serves 4-6.
