Ratatouille

Way easier to make than spell. And it's so yummy!

Ingredients:
  • Ground meat of some kind (pork sausage is really good)--about a pound
  • 1 medium or 1/2 a large onion (red onions are super yummy)
  • 2-3 cloves of garlic
  • 1-2 medium zucchini
  • 1 medium crookneck (yellow) squash
  • 1 medium red bell pepper
  • 1-2 cups mushrooms
  • 2 medium tomatoes (or 3 romas)
  • 1 to 1 1/2 cups of grated parmesan cheese
  • spices as you like (I used seasoned salt [salt, paprika, etc.], spicy grill seasoning, and oregano [or an Italian spice blend].
Brown up the sausage; move the meat to a different bowl, but reserve the grease. Saute the onions and garlic in the sausage grease (add a dollop of olive oil if the sausage was really lean). Return the sausage to the pan & combine with the onions & garlic; set aside.

Wash & slice zucchini, crookneck squash, bell pepper (break down into bite-sized pieces), mushrooms, and tomatoes (dice). Grease the bottom & sides of a medium casserole dish with olive oil. Layer the veggies and meat as you please--just don't put the meat on the bottom (the flavors will cook through better if it's in the middle) and reserve the tomatoes for the top (the liquid will soak down and help the other veggies to soften). Between each layer, sprinkle plenty of salt, cheese, and spices. Top it all with a final layer of cheese.

Bake, covered, at 375 for 30-50 minutes or until veggies are soft but not mushy. Remove cover for the last 15 minutes of cooking to crisp up the cheese and reduce the liquid. Makes 4ish servings.

So we tried this last night, and it was great! Probably could have been even better, but I forgot to buy the mushrooms and bell pepper. Ah well.
