"Healthified" Chocolate Chip Cookies

Okay, so I realize that this one and the last one aren't exactly dinners. But I'm way excited to try this because they say it cuts the saturated fat & calories by a quarter if you use canola oil instead of shortening. Woo hoo!

Ingredients: 
  • 3/4 c white sugar
  • 3/4 c brown sugar (packed)
  • 1/2 c butter (room temp)
  • 1/2 c canola oil 
  • 1 tsp vanilla
  • 1 egg
  • 2 c whole wheat flour
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 3/4 c chocolate chips
Standard drill for cookies: Preheat oven to 375. Beat the crap out of the sugars, butter, & oil (better beating = fluffier cookies), then beat in egg & vanilla. Add dry ingredients & stir until blended. Stir in chocolate chips. Drop dough by rounded tablespoons(ish) & bake about 8 minutes. Cool 1 minute on pan, then move to cooling rack. Makes about 3 dozen.
